Castle Street is Heating Up with New Restaurant, Rolled and Baked

Biscuits for the BOLD

The Castle Street Arts & Antiques District welcomes new neighbor, Rolled and Baked to the local Wilmington food scene. Former Top Chef contestant, Micah Edelstein, along with Bill and Anna Ward are aiming to tantalize the palate of Wilmington locals and visitors alike with their new restaurant concept focusing on, “Biscuits for the BOLD.”

Nice to Meet Ya!
Micah Edelstein won the hearts and stomachs of Bill and Anna Ward when they visited Portland, Oregon, and happened upon Edelstein’s restaurant, The Feisty Lamb, in 2016. The Ward’s were so enamored with the complex and perfect pairing of flavors within the dishes that they decided her talents must be considered for the new restaurant project they were conceptualizing for North Carolina. Excited about the opportunity, Edelstein decided to say goodbye to the Feisty Lamb and Portland and begin this new NC based adventure. This began the creative planning behind this biscuit revolution, Rolled and Baked.

Location, location, location. 
Originally considering Charlotte, NC, for their restaurant venture, the Ward’s decided after having little success in discovering the perfect location to anchor their biscuit business, that a change of pace was exactly what they needed. This change brought them to Wilmington, a part of NC that was not unfamiliar to them. Once focusing efforts in Wilmington, they found a first-rate location nestled in the heart of downtown within the Castle Street Arts & Antiques District—509 Castle Street. Bill and Anna fell in love with the neighborhood and community and Edelstein couldn’t agree more. She has been enchanted by the historic homes, the friendly mix of people and the great charm of this downtown spot.

The MENU
After defining the concepts originality, Rolled and Baked—Biscuits For the Bold, Edelstein knew she needed to do her research of southern cooking. She reached out to a long-time friend and South Carolina native to take a look-see of what was fueling these southern recipes with so much flare. “I was looking for what southerners love and how I could do it a little different and more exciting, but by using ingredients that people love, mixed with some exotic ingredients from other cultures,” explains Edelstein. “You will find some things that are known, mixed with some things that are unknown, that have come together on the plate in a very heavenly way,” states Edelstein.

Interior Talk
While currently under renovation, this Castle Street location has big plans in the making. The concept for the interior is a melting of pop art meets vintage comic strip. If you can imagine your favorite pop art piece exploded within an interior, this will be it. Edelstein aims to brighten the currently dark space, then add pops of bright color for an upbeat encapsulation of fun. For those perfect days, check out the patio seating. This will be a fun addition to the sidewalks of Castle Street.

 

Biscuit Hour
One of the best times of day for Edelstein, is tea time. Expect to see her own version of this, because she is bringing Biscuit Hour to Wilmington. This is something every southerner never knew they needed to experience. Keep a look out for more fun surprises from creative mastermind, Micah Edelstein. Opening this Spring, Rolled and Baked is going to be that yummy restaurant where calories just don’t count!
